  1. Prepare all the required ingredients.
  2. Grate daikon and carrots on a side with medium to large holes.
  3. Meanwhile, toast pine nuts on a dry pan.
  4. Place daikon and carrots in a salad bowl and top with toasted pine nuts.
  5. Make dressing by mixing lemon juice, olive oil, and honey. Add dressing and mix the salad well. Add salt to taste.
  6. Let the salad rest for at least 30 min before serving. Enjoy!
